Lemon-Maple Marinated Chicken with Grilled Lemons

Ingredients
4 Brookshire’s Boneless Skinless Chicken Breasts
6 lemons, divided
6 Tbs maple syrup, divided
2 Tbs fresh thyme leaves, plus more for serving
2 Tbs white wine vinegar
2 Tbs extra virgin olive oil
1 tsp garlic powder
1 tsp salt
1 tsp pepper
Directions
- Place chicken in a shallow dish. Juice and zest two of the lemons. Combine with 3 tablespoons of maple syrup, thyme, vinegar, olive oil and garlic powder. Pour over the chicken. Sprinkle with salt and pepper. Marinate for at least 2 hours or overnight.
- Preheat grill to high. Combine the remaining maple syrup and the juice from two more lemons to use as a basting sauce. Slice the remaining two lemons for grilling. Place the chicken and lemon slices on the grill. Cook for 5 to 6 minutes per side while basting. Serve the chicken with grilled lemons and additional thyme. The juice from the lemons will have a sweet and sour caramelized lemon flavor.
